Hi, I’m Kim!

I'm a wellness coach that helps people over 40 lose weight, reduce cholesterol, and increase energy through a plant based diet. I have over 25 years experience in the health and fitness field. I hold an M.Ed. in Higher Education/Health from the University of Central Oklahoma and a B.S. in Health/Community Wellness from Oklahoma State University. My certifications include: Plant Based Nutrition (Center for Nutritional Studies- eCornell), Fitness Nutrition (ACE), and Group Fitness Instructor (AFAA). I'm full time faculty at the University of Central Oklahoma where I teach health courses in the Virginia Peters Kinesiology & Health Studies department.

Most of my childhood and adult life I struggled with digestive issues that were painful and annoying. I suffered from cycles of  stomach pains, bloating, and gas. Embarrassed to ask for help, I told myself it was "normal" for my body, and there was nothing I could do about it. Despite eating "healthy" and staying active, I held on to extra weight in my stomach, back, and arms. I couldn't find anything to allow my body to release the extra weight.

 

In my early 40's I was introduced to the relationship between our gut and overall health. I discovered that my body was intolerant to specific foods, causing many of my negative symptoms I had suffered from for years. I began to uncover a direct link between food intolerances, weight gain, athletic performance, and our most common diseases. Happy to have uncovered helpful information, I was frustrated that this information wasn't common knowledge.

But that wasn't the most frustrating part...

 

I realized that I had been causing my discomfort, and promoting disease by consuming foods I was taught were "healthy". The reality was that many of these foods were actually harming my body, as well as my family and friends. I had been led to believe the "everything in moderation" theory of food. I allowed myself to eat the foods I discovered my body was intolerant to on weekends, assuming it wasn't enough to negatively effect me. And that is when the stomach pains, intestinal gas, and bloating came back… every_single_ time! Maybe you can relate and know how frustrating and defeating this is. 


That’s when I decided that there HAD to be a better way

I made it my life’s work to study the real science behind food and nutrition and learn why I was struggling for so many years. I discovered why so many I loved were suffering from weight gain and our most common western diseases. I learned how to enjoy foods that nourished my body and loved me back. 

 

I finally felt freedom with food and my body, and I learned how to eat and take care of myself that felt nurturing, rather than punishment. I discovered the value of fueling my body with whole foods from nature that prevent inflammation and disease.

Which led me to some pretty incredible results….

 

I had freedom from my digestive issues, improved energy, reduced inflammation and improved athletic performance while long distance running.  My cholesterol, blood pressure, and A1C levels dropped to an all time low. Plus, I released the extra weight I had always held on to. Now it has been 7 years of making my nutrition a priority and I can honestly say that I feel amazing as I've entered my 50's! My passion is to help others live a healthy lifestyle by consuming foods that heal your body and promote a long and healthy life.
